Hospitality is a young man's game. I was at the stage where I was not physically burned out but mentally burned out. I was working unsociable hours and I was missing out on things with my family. I used to get my roster on a Sunday night for the following week and I did not know if I was working Monday or what day I was working. I needed something with a little bit of clarity and consistency. I needed to get my life back, in a way. I took a wage drop for the first year but I did that because I knew the wages were going to increase in year two and year three, with a nice big increase after year three. I accepted it was going to be a struggle for a year or two, but, at the end of the day, what is three years of hard work to really turn your life around?
